Whether it's braised, grilled, rubbed, smoked, spiced, cured or otherwise, each 125 pound heritage pig is sure to somehow satisfy your pork craving. Dishes are judged on creativity, utilization and overall flavor. COCHON 555 also includes a mixologists showcase featuring 5 local winemakers. The purpose of the event? To promote heritage pigs and breed diversity in local and national communities. If you choose to go VIP, you will have access to a lounge featuring artisan cheese, oysters and reserve wine. General admission is $110; VIP ticket is $160 (discount to industry). Silverado Resort is offering a special room rate of $99 for those who plan to stay the night.
